Fermented foods like kefir, kimchi and kombucha are marketed as the surest way to diversify your gut microbiome, often pitched as superior to fibre. A landmark trial backs the diversity claim, but a newer study shows fibre alone can do the same job. Four sources score where the fermented-foods trend earns its reputation.
Fermented foods, advocates argue, deliver live microbes and their metabolic by-products straight to the gut, making them the single most effective food group for raising microbial diversity, more effective than fibre alone. A widely cited Stanford trial found a ten-week fermented-food diet increased diversity and lowered inflammation in ways a matched high-fibre diet did not.
The trend rests on a genuine and well-publicised finding. Wastyk et al. put 36 healthy adults on a ten-week diet high in fermented foods, yoghurt, kefir, fermented cottage cheese, kimchi, vegetable brine drinks and kombucha, and measured a significant rise in gut microbiota diversity alongside a drop in 19 separate inflammatory markers 1. A matched high-fibre diet in the same trial did not show the same average effect on inflammation, though a subgroup with higher baseline diversity did benefit. A larger 2025 meta-analysis pooling 19 randomised controlled trials across more than 4,000 adults reinforced the broader case for fermented foods, linking them to improved gastrointestinal wellbeing, most consistently a higher frequency of bowel movements 3.
Fermented foods also had things a lot of trends do not: a food category with millennia of culinary precedent, a credible clinical trial behind it, and heavy amplification from dietitians and wellness creators on TikTok's #GutTok, which helped push the global fermented-foods market past fifty billion dollars by 2024. The pitch that fermented foods beat fibre outright is where the science gets ahead of itself.
